meet our founder
Penelope Jane is a Health Consultant focused on Functional Medicine. She is a visionary, healer, leader, teacher, and author, deeply connected to our Earth. She is valuable to her clients in guiding them to advocate for their own best health when communicating with their doctors, clinicians, and insurance providers. She is dedicated to evidence-based complementary and alternative medicines and health strategies that optimize physical and mental well-being, improve overall quality of life, and promote emotional harmony by reducing stress-induced responses in our modern world.
Penelope has a Master of Science in Exercise Physiology and Clinical Health Coaching from the University of Utah, where she held a faculty position for several years teaching graduate students Interventions in Complementary and Alternative Medicines. She has worked extensively in the traditional US healthcare system, working with leaders of large hospital systems and national healthcare insurers. Penelope has also contributed extensively to community health promotion. She served on the Executive Leadership Board for the American Heart Association and currently serves on the Community Action Board for the University of Utah College of Health Sciences. She is also a national speaker, focusing on living healthfully in the face of chronic disease.
Penelope is a 500-RYT yoga instructor recognized by the International Yoga Alliance. She has been teaching health and movement for several decades and became passionate about yoga and nature after moving to Park City, UT in January of 2009. Penelope is trained in Hatha and Somatosensory yoga, with a focus on developing strength and fluidity in movement, based on alignment and sensory connection. Penelope’s teaching encourages students to intuitively explore the uniqueness of their own bodies and practice.
Penelope’s most recent journey began in the Wasatch Mountains of Utah, where she observed the profound healing properties of the natural landscape. This exploration led her to become a certified Forest Therapy Guide with ANFT, the Association of Nature and Forest Therapy, following an Eastern medicine practice proven to reduce cortisol release, lower blood pressure and heal cardiovascular and cancer symptoms, conditions seen frequently in our modern, fast-paced lifestyles.
Penelope also provides Sound Healing and leads Guided Meditations for individuals and small groups.
Penelope is certified in CPR, and Basic and Wilderness First Aid.
With a strong foundation in clinical health coaching, exercise physiology, holistic health, and yogic and Ayurvedic philosophy, Penelope integrates science and wellness practices to provide practical, impactful guidance. Her work empowers individuals to elevate their lives—spiritually, emotionally, and physically—helping them achieve a higher level of well-being and transformation.
Penelope is proud to begin her new journey—one conceived by women, supported by women, and designed for women and their families.

Our core mission is to support the optimal health of the Souljour Health community by providing members with tools to navigate the western healthcare system. We seek to advance members’ capability to advocate for themselves and their families when connecting with practitioners, providers, and insurers.
Our services and community offerings will also guide members to deep, sensory, holistic healing practices while supporting healthy behavior choices.
Souljour Heath aims to blend Eastern and Western medical knowledge and integrate traditional health consulting with holistic healing practices. We encourage our Health Consulting clients to experience our other offerings including Forest and Nature Therapy, Yoga Privates sessions, Guided Meditations, and Sound Healing. Each of these programs comprise important components of our holistic wellness approach. We are also developing the podcast Voices of the Earth in partnership with Sage Mountain Sanctuary to discuss the importance of protecting the natural world and further broaden the conversation around these topics.
Our goal is to enhance the health and well-being of our clients by reconnecting them with the peace, tranquility, and rejuvenation found in nature and community.
